    Tis the Season..... for Lent.

    Ash Wednesday was this week, officially kicking off the Lent season. 46 days through which many Christians will reflect upon the current state of their lives and the world in which we live. An opportunity to appreciate life in many ways, most common being the choice to abstain from some of our favorite vices, and (on Friday's at least) giving up meat.

    Now the church defines 'meat' as anything warm blooded, which is why most people turn to seafood on Friday. This year will be no different, so keep an eye on out for all the different options we will be advertising between now and Easter!

    11 Easy to Adhere to Food Safety Tips

    Food is life. It can bring families together, comfort you in a time of distress and turn a memorable event into an unforgettable smorgasbord. However, as with anything you put into your body, it needs to be carefully maintained and treated with respect, otherwise you will end up with a very different memory, the unforgettable horror associated with an intense bout of food poisoning. So if you aren't having your event professionally catered (which really, you should) at least make sure to always adhere to these following tips for Food Safety. 


    Always wash your hands with hot soapy water for at least 20 seconds before and after handling food.

     *2-Hour Rule

    Refrigerate or freeze perishables, prepared food and leftovers within 2 hours. Do not leave them sitting out at room temperature.

     *Thaw Law

    Always thaw food in the refrigerator. Never defrost food at room temperature on the countertop.

     *Temperature's Rising

    Cook food to the proper internal temperature and check for doneness with a thermometer. Not sure what the proper temperature should be? Don't be afraid to Google it!

     *Cutting Edge Clean

    Wash cutting boards and knives with hot soapy water after food preparation, especially after cutting raw meat, poultry or seafood. Sanitize cutting boards and counters with a dilute bleach solution - Add 2/3 cup bleach to a gallon of water; put in a spray bottle for easy use.

     *Raw Deal

    Never place food on the same plate or cutting board that previously held raw meat, poultry or seafood unless the cutting board has been thoroughly washed.

     *The Eyes Have It

    Use visual signs of doneness when a thermometer is not used:·Steam rises from food

     *Clear juices run from meat and poultry, not pink

    Pork, veal and poultry are white inside, not pink or red. Shellfish is opaque and fish flakes easily with a fork & Egg yolks are firm, not runny, and egg whites are opaque

     *Bottom Line

    Store raw meat, poultry and seafood tightly wrapped on the bottom shelf of the refrigerator. This prevents the raw juices from dripping on other food.

     *Mindful Marinating

    Always marinate food in the refrigerator, not on the countertop. Discard leftover marinades that have been used with raw meat, poultry or seafood.

     *Towel Turnover

    Replace and wash dish towels and sponges often to prevent the spread of harmful bacteria throughout the kitchen. If you don't want to throwout a brand new sponge each week, you can pop it into the microwave for two minutes to kill off any bacteria. Use paper towels to dry washed hands after handling raw foods.

    7 Winter Wedding Cake Ideas

    It is generally accepted that the summer is 'Wedding Season'.  However there are certainly many reasons to consider having your wedding in the winter. So below we compiled a list of seven various ideas for a Winter Wedding Cake theme.

    1) A Snow Flake Cake (try saying that 10 times) can be the perfect combination of winter elegance and eye popping color. Want to add a dash of color to your winter white wedding? Do it in the cake! Make the top half of the cake match the color-scheme of the wedding, and pipe the bottom half with white flowers.

    2) A Lavender cake can be just as easily recognized as a winter theme, there is no need to feel trapped in the color scheme of ONLY blue and white. 

    3) A Winter Forest Cake - With a few hints of red and simple wintery pine trees, this cake would be an elegant testament to all the beautiful things about winter.

    4) Holly Branch Cake - by adding the tree of the season you turn a simple white tiered cake into a winter cake, and of course, you can add some lovebirds to the holly branch you add an undeniable a romantic sentiment.

    5) The DIY Wedding Cake - This requires just a little burlap, some pieces of pine tree, pine cones, and holly berries. Sprinkle on a dash of snow, and VOILA! You have got yourself one elegant winter wedding cake.

    6) A Snowman and Snow Woman Cake - Nothing extravagant here, just replace the Bride & Groom cake topper with exactly what you picture, that of a Snowman and his new Bride.

    7) Blossoming White Cake - Who says you can't have over-the-top flowers at a winter wedding? Especially if the wedding date lands in between the transitional time from winter to spring. White roses are always in, so add some blossoming detail to your all-white wedding cake.

    New Year Resolutions

    Everybody has aspirations for the New Year. I can assume you are one of them! 
    So if you have the 'New Year, New Me' attitude and are already dreading your resolution to go to the gym and eat right, let us at least help with the 'eating right' side of things.

    Holiday Do's & Don'ts

    Arguably the most important part of the holiday season is not the decorating or even the gift giving - it is the food! And as you all know, there are logistics one needs to figure out when it comes to assuming the role of chef. Are you responsible for preparing any meals this year? If the answer is yes, let us help ensure your experience in the kitchen is guaranteed to be  a successful one by following our cooking do's and don't.


    Holiday Cooking Do's 

     Give Yourself Enough Time - The last thing you want is to be running around the kitchen, missing out on all of the festivities family and friends are experiencing elsewhere in the home. A few days before, see what you can prepare ahead of time (for example, side dishes or dessert). Then, invite guests over at an appropriate time, meaning, don’t have everyone arrive too early so that you have a chance to get the rest of the food started without distractions and interruptions.

     Make A List - When you know what you’d like to serve for your holiday breakfast, lunch and/or dinner, make a list of all of the ingredients you need to get the job done (and of course, check it twice). Doing so can help you rest assured knowing that you have everything you need to create your feast. You don’t want the stress of needing to make a last minute trip to the grocery store while the food is already cooking, do you?

    Read The Directions - No one wants an under or over cooked meal, so make sure you read the directions carefully before sticking anything in the oven or on top of the stove. If you don’t know how long something is meant to cook for, be sure to do your research first instead of just winging it.


    Holiday Cooking Don'ts

    Don't Feel Like You Have To Be Over The Top - Of course it’s nice to offer a variety of foods to make sure there is something for everyone, but remember that the holidays aren’t about being the best chef on the block – they’re about spending time with the people you love the most. Keeping things simple is a surefire way to avoid major holiday stress.

    Don't Put Pressure On Yourself - Putting too much pressure on yourself could absolutely lead to a kitchen mishap. Instead, take things slow and prepare things at a pace and in a way that is right for you. This also means making an honest effort to not let others pressure you. If guests are getting impatient, kindly let them know the food is on the way (you may benefit from having some appetizers out in the meantime).

    Try Something Totally New - It is always fun to try a new recipe, but having a home filled with holiday guests may not be the right time to do so. If you absolutely insist on switching things up, make sure you test out the recipe a few times prior to the big day, so that you can avoid disaster if it does not come out as planned.

    12 Cookie Baking Tips

    Before you get started, we have some general advice that's great for any baking adventure:
    - Always follow recipe directions exactly
    - Measure accurately
    - Always pre-heat your oven

    Now that we've got that down, let's jump into our pro tips!


    1. Bake Your Cookies in Temperature Order

    When baking several different temperature batters at the same time, begin with the lowest temperature and work up. For example, if you have oatmeal cookies that need a 350 degree oven and chocolate chip cookies that need an oven at 375, bake the oatmeal batch first.

    2. Start with the Shortest Baking Time

    Ever notice how recipes give a time range for how long a batch of cookies will take? We advise checking on your batch at the earliest time first, and then every minute after that. Once you have the timing down, you know how long each sheet you bake afterward will take.

    Baking times vary because of altitude, baking sheet material (dark coated vs. aluminum, etc.), position of the rack in the oven, whether there are two sheets or one in oven at the same time, and the size and thickness of the cookie.

    3. Keep it Fresh

    Do you remember how long your baking soda's been in the pantry? It might be time to swap it out for a new box that's more potent. Use fresh, non-expired ingredients, especially reactants like baking soda and powder.

    Pro tip: With a permanent marker, write the date you opened your reactants on the package. No more guesswork!

    4. Start Clean - Every Time!

    Bakers looking for a shortcut, beware! Always use a clean cookie sheet and spatula. Do not take a hot sheet out of the oven, lift off the cookies, and drop the next batch on a hot dirty sheet. Instead, keep a few cookie sheets on-hand, so you can have one in the oven while the other is cooling and being cleaned.

    5. Rack 'em

    Always cool your cookies on racks. Air needs to circulate over and under, because butter and sugar keep cooking and bubbling after you remove them from the oven.

    After they're cool enough to touch (or bite without burning your mouth), store them in a cool, airtight container.

    6. Get Ahead

    When you're making multiple types of cookies, which can take a lot of time, break up the work by making the dough ahead. We recommend making one or two batches of dough each day and storing them in the refrigerator. When it comes time to actually bake, you'll have a big part of the work already done!

    7. Shape Up

    When possible, shape your dough before you store it in the refrigerator. For example, if a recipe says to drop rounded, even spoonfuls of dough onto your cookie sheet, we recommend that you "just drop little balls of cookie dough into food storage bags or containers, and put them in the fridge until they're ready to bake."

    Our Pastry Chef also says you can do this with gingerbread men and other cookie shapes. Lay out the shapes on layered parchment or wax paper, wrap them in foil, and refrigerate.

    8. Bake for Your Friends

    Plan your Christmas cookie flavors keeping your friend's and family's favorites in mind. Do you and yours like spice, chocolate, fruit? Figure out which flavors are most popular and make a nice mix.

    9. Bake On-Demand

    Sometimes you don't need hundreds of cookies on-hand. We have a great fix: Too much to bake and store at once? Don't! Bake a few at a time from pre-made dough in fridge.

    Cookies whenever you want? Yes, please!

    10. Change Up Your Cookie Exchange

    Tired of your same-old cookie exchange? Here's a way to change it up: If you have a few friends that also love to have cookies around for the holidays, make a deal: exchange dough!

    For example, if you have four friends, make five batches of dough. Keep one, then gift the others. That way, each of you only buys ingredients for one type of cookie, and they're ready to bake when needed. It saves time and money!

    11. Dial Down the Decorating

    The holidays are so crazy-hectic for everyone, so don't get caught up in decorating cookies, try delicious flavors and uniform, pretty shapes. A nice variety makes the best cookie plates.

    12. Practice Perfect Positioning

    Finally, we answer your biggest baking question: Where do the racks go, anyways?!?!?!

    "When baking one sheet of cookies, position the oven rack in the middle of the oven," our Chef says. She also recommends that if you're baking two sheets of cookies at once, divide your oven into thirds. Place your racks in the first and second third (from the top), and then halfway through baking, switch them.

  • 5 Jewish Staples anyone can cook this Hannukah

    1. Kugel

    There’s little not to like about these Jewish casseroles, usually served on Shabbat and holidays.Potato kugelis basically a giant, baked tater tot, while sweet noodle kugels will make you feel like you’re eating dessert during the main course (as they should — they usually use a lot of sugar). Feel free to have fun with these by adding cinnamon and raisins to a noodle kugel, or using sweet potatoes instead of regular

    2. Matzo Ball Soup

    There are few foods as perfect as these delicious little carbohydrate balls drenched in chicken soup. Matzo ball purists swear by the importance of schmaltz, aka chicken fat, in making the balls, but non-meat eaters (and less intense cooks) can definitely get by without it. Whatever you do, just don’t buy it in a jar off the shelf in the supermarket. (Gondi, the Persian chicken and chickpea balls, are often compared to matzo balls and duh, they’re also delicious.)

    3. Potato Latkes

    Kids think Hanukkah is all about the presents, but grown-ups know it’s really about the latkes. These little potato pancakes are fried in tons of oil to commemorate (one of) the ancient Hanukkah miracles. The story goes like this: After the Jews won their rebellion against their Syrian rulers in 164 BCE, they found their holy temple had been desecrated. They had only enough untainted olive oil to light the menorah for a single day, but miraculously, the candles stayed lit for eight days, giving them time to restock their supply. So in honor of that oil, Jews deep fry. Serve with applesauce, sour cream, or Thanksgivukkah-inspired cranberry applesauce. 

    4. Chocolate Rugelach

    If you have ever been to Jerusalem, you hopefully stopped at Marzipan Bakeryto try what are hands down the absolute best chocolate rugelach in the entire universe. If not, good news: You can make these gooey, mini-croissant-like pastries at home. The trick is the dough, which usually has cream cheese or yogurt in it. Try making these classic chocolate rugelach, or if you’re feeling really wild, put the chocolate in the dough and then add even more fillings, with this recipe. And you can always make special pecan pie rugelach for a Jewish Thanksgiving.

    5. Cholent “the original slow-cooked dish”

    Has its origins in the prohibition of working — and cooking — on the Jewish Sabbath. In pursuit of a hot lunch on Saturday, a slow-cooked dish was born: One could start the cooking before sundown on Friday and enjoy the food Saturday at lunch. While many people think of cholent as an Eastern European dish, it actually traces its origins back to the Middle East, through North Africa and into Spain. The result is that there are many, many kinds of cholents, including the Iraqi Tbit, made with chicken, Moroccan lamb stew, and a beef, vegetables, and bean version from Budapest. Sometimes a super-simple family recipe, though, is all you need. And good news for vegetarians: There are plenty of meat-free versions too.

    7 Additional Events that you might need to have catered


  • 5 "Must Have" food items this holiday

    Everyone has their own idea of what is the perfect holiday meal. Based upon personal taste, and usually inspired by memories from your childhood, it can vary wildly from person to person. However, that being said, there are a few items that can usually be counted on no matter where you end up this Thanksgiving.

    So below you will find our list of the top five staples needed for any Thanksgiving meal. 

     1) Of course, number one is Turkey. The unequivocal icon of this holiday, no American could argue against denying it it's rightful role on the table every Thanksgiving. However that does not mean you couldn't have some fun with it this year. You can roast it, grill it, braise it, heck you can even deep fry it. There are truly dozens of ways to prepare a turkey, each more creative then the last. If your feeling a little Mad Scientist you could attempt the intimidating Terducken. For anyone not aware of this feat of genius, a Terducken is a Turkey stuffed with a Duck.....stuffed with a Chicken. However no matter how important the turkey is to the meal, it can be the largest hassle. Hogging your oven for hours, we recommend ordering a Whole, Fresh Turkey from us this year, full cooked of course! This way you and your kitchen are free to cook all of your other favorite side dishes this November 26th, while leaving the bird to the professionals.

     2) Mashed Potatoes. Arguably the second most important staple of the holiday dinner, out ranked only by the turkey itself. While the great Mashed potatoes debate rages on, - smooth vs lumpy, there are just as many original ways to cook these as the turkey. Loaded potatoes (somebody say bacon?), vegan potatoes, the list goes on and on. While I could ramble on about mashed potatoes some more, I am going to let it lead me to my personal favorite thanksgiving item - 

    3)Sweet Potatoes covered with Marshmallows. As important as the first two items on our list are to any traditional Thanksgiving dinner, these items can also be found all year long. However, sweet potatoes with marshmallows melted across the top will always make me think of Thanksgiving, and Thanksgiving only. It is iconic. Even if you are dead set on cooking your entire holiday dinner alone, I implore you to order a tray of this delectable dish.

    4) Cranberry Sauce or Relish. Maybe not the most requested dish on the table, but wouldn't Thanksgiving feel like poor imitation without it? While most of you are familiar with cranberry sauce from a can, do not confuse it with our Cranberry Relish. Truly homemade, infused with chopped cranberries, walnuts and crushed pineapple, itis its own unforgettable dish.

    Now we know Thanksgiving is still a month away, but Thanksgiving is also only a month away! If you aren't careful it will sneak up on you, and you will spend the last week of November scrambling to cook the perfect holiday meal.

Your choice between Mashed Potatoes or Sweet Potatoes covered in marshmallows, either one will look perfect on your table. Other sides include, - String Beans Almondine, Maple Glazed Carrots, Cranberry Jelly or Relish, Turkey Stuffing, and of course Dinner Rolls with Butter. Also all of the items are also available A La Carte, by the tray. All food is prepared for pick up on November 25th, with Reheat Instructions included.

  • Beautiful Outdoor Wedding

    Nothing makes us more pleased here at Shore Catering than a happy ending!  Alison and Brandon DeHaven were our lovely Bride and Groom last fall, and as their one year draws closer, they reached out to thank us. Allison mentioned the sense of ease she felt from the very first phone call all the way through their Premier Clambake Reception.

    Highlights included an antipasto display prior to the ceremony, as well as a Gourmet Cheese Basket.       Mouth watering Hor Devoures such as our Stuffed Mushrooms, Bacon Wraps, Seafood Raw Bar and our extraordinary Lobster Bisque Shooters.  

    And no reception is complete without Fresh Maine Lobster and Filet Mignon. To top it all off was our Custom Tiered Sand Castle Cake.

    The perfect menu for the perfect wedding!!!  From our service with a smile during cocktail hour to our fresh and perfectly cooked lobsters on site.  It really doesn't get better than this!! We offer top of the line service along with our perfected menu options. Just take a look at the bride and groom, ecstatically enjoying their fresh boiled lobster (in their sporty lobster bibs)! The eve kicked off with our servers happily passing jumbo shrimp in shot glasses, mini crab cakes, clams casino, bacon wraps, mini spinach pizza slices with chicken & artichokes, mini reubens and baked brie with raspberry puree in a phyllo. In addition to our fresh lobster, the rest of our spectacular dinner menu for this eve was filet mignon with spinach and roasted peppers, cavatelli & broccoli, chicken marsala, new England potatoes & grilled summer vegetables.  So now that your mouth is watering and you want superb catering, give us a call to cater your next event 732-920-3040.  We have packages available or we can customize your desires.

  • An Elegant Clambake for an Elegant Wedding

    Had the pleasure of stepping back into an old comfortable pair of shoes as an onsite coordinator for a most amazing couple and a truly wonderful wedding. And of course Shore Catering provided the utmost superb catering with their mouthwatering menu, professional servers and flawless service.  Ocean Tents erected absolutely elegant tents and lighting.  Stricktly 60's Band and Erich the DJ provided musical ambiance and NRG Videography and BluRevision Media Photography captured their every moment. But what truly stood out is the Bride (and Grooms) detail to every entity of their special day.  No detail was neglected.  Truly made my task seem flawless, not to mention their wedding look spectacular.


    I arrived the morning of, and there she was, very meticulously inserting fresh eucalyptus and lavender into the chuppha.....I asked if she would like me to take care of that and she responded with, I am good, it is relaxing!

    That was the least of detailed tasks.  From the welcome board for guests to the handmade built bar(by the groom) that their guests self poured their beer from to the home growing of herbs and the trip to the NY flower market few days prior to pick the appropriate flowers for the full length runner centerpieces across the beautiful wood tables.  To 7 months of visiting the Collingswood Flea Market to collect vintage glasses as guest favors (and to drink their cocktails from) and decorative accessories to pot the herbs in. The comfort station that supplied flip flops, sunglasses, sunscreen, bug spray for guests (and the umbrellas, which were briefly needed).


    And I mustn't forget to mention the interactive creativity for the guests.  Their names and table were attached to a dart and in turn the dart was to pop balloons filled with paint to create a piece of artwork to adorn the new Mr. and Mrs. walls.  Instead of a guest book sign in, guests signed a guitar that also will become a decorative accessory for the couple's home. 

    A most wonderful DIY wedding!  We wish them the best and thank you for having us!!!
